Chocolate chip banana bread

Before I forget -- again -- I'm lodging this recipe from esmerel, who says I must make this at least once and try it:

Makes 2 loaves

  • 4 cups flour
  • 1 1/3 cup packed brown sugar
  • 1 tbs baking powder
  • 1 tsp baking soda
  • 1 tsp salt
  • 1/4 tsp ground cloves
  • 1/2 tsp nutmeg
  • 1-1 1/2 tsp cinnamon
  • 1 1/2 tsp vanilla
  • 2 cups mashed bananas ( ~4, browner is better)
  • 1 1/4 vegetable oil
  • 4 large eggs
  • 2/3 chopped nuts (optional)
  • ~1 cup chocolate chips (optional - I use a 12 oz pack because YOM CHOCOLATE)

 For streusel topping:

  • 1/3 cup packed brown sugar
  • 1/4 cup flour
  • 2 tbs butter (you can use oil or shortening if there is a dairy allergy)
  • 1/3 c chopped nuts  (optional)

Preheat oven to 350F. Grease or spray with non-stick cooking spray two 8x4x2 or 9x5x3 loaf pans. Make banana bread:In a large mixing bowl, combine 1 1/2 cups of the flour, plus the brown sugar, baking powder, baking soda, salt, cloves, nutmeg, and cinnamon. Add banana, oil, and vanilla. Beat with an electric mixer on low speed until blended, then beat on high speed for two minutes. Add eggs; beat until blended. Stir in remaining flour and nuts (if using nuts). Pour batter into the loaf pans. Make topping:Combine brown sugar and flour in a small mixing bowl. Cut in butter with fingers, fork, or pastry blender until mixture resembles coarse crumbs. Stir in nuts (if using). Sprinkle on top of loaves. Bake in 350 oven for ~50 minutes or until a toothpick inserted into the center of the loaf comes out clean. cool in pans on a wire rack for ~10 minutes. Remove from pans and let cool completely. Wrap and store overnight (hahahahahaha) at room temperature before slicing.

Note variations in environment have had this recipe sometimes come out dry and other times not. Haven't quite put my finger on what causes it or how to compensate.
