Pesto Orzo with Pine Nuts

Pesto Orzo with Pine Nuts

1 package Orzo (1 lb usually)

2 packages Knorr Pesto Sauce mix (green package, they finally have it at Target, YES!)

1 package pine nuts (approx. size on this, Misty?)

2-3 broiled chicken breasts, cut up (optional)

Much freshly ground black pepper

A white cheese (Romano, mozzarella, etc.) of your choice to taste

Make orzo according to package directions. Drain. Mix pesto sauce in large bowl according to directions (I don’t cook mine as I usually combine the orzo immediately and that makes it hot enough.) Add pinenuts. Add lots of black pepper. Add chicken if you want it. Add some white cheese (I usually throw in whatever I have a bit of left in the cheese drawer.) Add more black pepper and stir. Eat.

This recipe has many variations as you can toast the pinenuts or not. You can eat it hot or cold. You can make it taste different according to the cheese you add. You can also add soaked sun-dried tomatoes, although if I do that, I usually leave out the pinenuts.

2-ish oz. on the Pinenuts? I don't have a package right now. Usually, you want a pinenut to show up about every other spoonfull.

Not that I don't think the Pesto package is a great read, but I am curious why you have this filed under the books and writing catagory?

*cough* I meant to do that! Really! (Uh. Forgot to slap on a category? The categories are listed in alphabetical order in quarto, and if you don't select one, it goes to the first one in the list. 'Books and writing,' starting with 'b', gets that nod.) It's fixed now. Thanks for catching it.
