Jody's Caribbean-flavor turkey

Yet another from the Jody Vault, in his attempts to provide me more interesting ways to serve up the healthily-cooked poultry we seem to be consuming a bit of these days. (Reminds me. I need to do a Penzey's order soon. Mmmm, Penzey's...my personal crack dealer. Any of the locals want to go in on an order?)

Caribbean-flavor turkey

enough turkey breast strips to serve 2-4

2 tbsp peach preserves

4 green onions

4 cloves garlic, smashed

1 tbsp (or more to taste) of your favorite hot sauce

2 tbsp of freshly squeezed lime juice

1 tsp of lime zest from above lime

1 tsp shoyu (that's soy sauce for the gaijin out there)

salt and pepper

Turn on your oven's broiler.

Pull out your favorite blender or food processor. Add the preserves, onion, garlic, hot sauce, pepper, salt, lime juice, lime zest, and shoyu. Mix it till it becomes as one. Coat the strips of turkey in the mixture.

Broil, turning once. On the turn spread the remainder of the yummyness over top of the strips.

Yeah, it's just that simple, but man, is it good. At least, Jody says so....so it has to be true, right? ;)

(Jody, how many should this recipe serve? I guessed 2-4, but didn't know for sure. Post a comment to this entry and I'll edit the recipe appropriately.)

Yeah....its serving for 4. You can use more or less of the marinade depending on your taste. One other tidbit....put your broiler rack on the bottommost setting of the oven. The sugar in the preserves will burn if too close to the element. Otherwise...nummy goodness.
